THE GRINGA $16
Crispy tortilla filled with a mixture of ground seafood consisting of fresh fish, octopus and lobster. Cooked in chipotle chili and brown pepper. Served with jalapeño, cilantro, and lime emulsion sauce.
JAPANESE EMPANADITAS $14
4 Crispy spring rolls, filled with short-rib. Seasoned with 5 spices, onion, soy and sesame oil. Accompanied by a tare (citrus sauce based on lemon and Chinese cinnamon) and nori seaweed mayonnaise.

CRUDO DE TUNA $20
Thin sliced tuna in a Mexican black aguachile, made from habanero chili in a “tatemado” style, pearl onion with creamy aioli, accompanied by 4 corn tortillas.

Grilled octopus lightly breaded with panko served with chicha morada, Peruvian Botija “olives” mayonnaise and smooth roasted cauliflower puree.
CAYA’S CEVICHE $22
